Chilled transport and storage of fish: application of predictive microbiology.

Summary

Several storage trials (including fish fillets, peeled shrimp, and lightly salted fish) were conducted in Iceland with the general aim to assist the industry in establishing realistic shelf life limits particularly when process and/or product parameters are changed and new technologies are introduced. The results allow the companies to analyse the effect of different storage and transport alternatives, or the effect of known temperature variations on the changes in the quality of the product. This paper describes the methodology used, results obtained and potential application of the results.
