Chilling and modified air packaging, chilling injury and keeping quality.

Summary

The models on keeping quality, chilling and gas exchange, already existing and developed independent from one another, are combined into a much more complex model to describe, simulate and predict the behaviour of quality and keeping quality of perishable products during modified atmosphere packaging. The effects of temperature, chilling and heating, film type, initial infection and their dynamics are briefly discussed and illustrated.
