Summary

The new regulations in food hygiene and storage temperatures in the UK, already in operation or coming into force in the near future, may prove difficult to achieve in the small retail outlet. The position is complicated by the apparent lack of understanding by some environmental health officers. The requirement for salmonella-sensitive chilled foods for 5 deg C maximum display temperature will be difficult to meet in many existing display cases, especially as small delivery vehicles will still be delivering at 8 deg C. Added to these regulations will be the effect of the current changes in refrigerants due to the CFC phase-out. The consequence may be that many small retailers will stop selling chilled products.
