IN THE SECTOR OF QUICK-FROZEN POTATOES, CONSTANT QUALITY IS MAINTAINED FROM PRODUCTION (SELECTION) TO CONSUMPTION, VIA MANUFACTURE (INCREASING AUTOMATION). SAVINGS IN RAW MATERIALS, ENERGY, LABOUR AND TIME ARE FACTORS OF THE PRODUCT PRICE. THE MARKET FOR POTATO PRODUCTS INCLUDES, ON THE ONE HAND, CHIPS, SAUTE POTATOES, ETC, AND, ON THE OTHER HAND, PRODUCTS MADE FROM FLAKED, GRATED OR MASHED POTATOES. THESE PRODUCTS SHOWED THE HIGHEST INCREASE IN VOLUME IN 1985 (+ 24%) AMONGST QUICK-FROZEN FOODS AND THEIR MOST DYNAMIC EVOLUTION WAS IN DOMESTIC CONSUMPTION. J.L.
