MAJOR APPLICATIONS ARE IN THE DAIRY INDUSTRY FOR PRODUCTION OF YOGURT, BUTTER AND SOFT CHEESE AND A SOFT CHEESE PRODUCTION LINE IS DESCRIBED. DETAILS ARE GIVEN OF THE AIR CONDITIONING AND FILTRATION SYSTEMS WHICH REMOVE PARTICLE SIZES LARGER THAN 2.5 MICROMETERS. STAINLESS STEEL AND PLASTIC MATERIALS ARE EXTENSIVELY USED. G.R.S.
