THE DECONTAMINATION PROCESS IS MORE AND MORE APPLIED IN THE FOOD INDUSTRIES, EVEN IF IT DOES NOT ALWAYS LEAD TO THE DEVELOPMENT OF CLEAN ROOMS. CLEANLINESS CONCERNS NOT ONLY THE PREMISES BUT ALSO THE STAFF AND THEIR SPECIAL CLOTHING. AN APPROPRIATE AIR QUALITY HAS TO BE GUARANTEED: MAINTENANCE OF AN OVERPRESSURE, CAREFUL FILTRATION, SUFFICIENT AIR CIRCULATION, LAMINAR FLUX. THE RISK OF CONTAMINATION BY FLUIDS HAS TO BE CONTROLLED. FINALLY, CONTAMINATION CONTROLS ARE NECESSARY AS WELL AS "BIO-CLEANING". J.L.
