Summary
Sale of live animals is a way of valorizing aquatic products and ensuring freshness. Ifremer conducted studies on large shellfish and aquacultured products. The survival rate of 5 species were investigated under laboratory conditions employing chilling as a metabolic-slowing mechanism. Survival times varied from 10 to 144 hours according to the species tested. Thus, this type of packaging is poised for expansion for these species, perhaps with the exception of scampi. However, good packaging quality is difficult to obtain under real fishing, culture and transport conditions.
