THE AUTHORS SHOW THAT THE PREPARATION OF WINE, PARTICULARLY THE KIND OF FINING, HAS A DETERMINING EFFECT ON THE EFFICIENCY OF COLD TREATMENT, ESPECIALLY IN STORAGE IN TANKS. THE ADDITION OF BENTONITE TO CHAMPAGNE BASIC WINES SEEMS TO BE THE BEST ADDITIVE TO FINING. A FIRST APPROACH OF QUANTIFICATION OF THE PROTECTING COLLOIDAL EFFECT IS ENVISAGED FROM MEASUREMENTS OF CONDUCTANCE AFTER WURDIG'S TECHNIQUE. (Bull. OIV, FR., 57, N 641-642, 1984/07-08, 683, 17730.
