THE AUTHORS SHOW THAT THE PREPARATION OF WINE, PARTICULARLY THE KIND OF FINING, HAS A DETERMINING EFFECT ON THE EFFICIENCY OF COLD TREATMENT, ESPECIALLY IN STORAGE IN TANKS. THE ADDITION OF BENTONITE TO CHAMPAGNE BASIC WINES SEEMS TO BE THE BEST ADDITIVE TO FINING.
