Summary

SUITABLY COOLED WINES ARE FILTERED THROUGH A FILTERING SHEET COVERED WITH DIATOMACEOUS EARTH AND KHT CRYSTALS (CREAM OF TARTAR). THE PROCESS CAN BE CONTINUOUS, EXCEPT FOR THE TIME REQUIRED TO REPLACE THE FILTER COVER. THIS PROCESS CONSIDERABLY REDUCES THE TIME REQUIRED BY COLD FILTRATION AND ALLOWS THE RECOVERY OF MOST ENERGY USED FOR COOLING.
