Summary

A general review on the technological advances in controlled atmosphere storage of fruit and vegetables in Italy. The technical and biological aspects of controlled atmosphere storage are surveyed and discussed, including building specifications (sealing and gas-tightness of the rooms, refrigeration system sizing) and the plants for the atmosphere control. The different engineering solutions for controlling amounts of oxygen, carbon dioxide, ethylene and other volatile substances are discussed, pointing out the most recent techniques, such as selective permeability membranes to remove oxygen from air, activated carbon adsorption of CO2 and catalytic conversion of ethylene. Computer controlled management of the plants and artificial ripening rooms are described. A. P.
