Summary
Olives (Olea europaea L. cv. "Picual") were stored under three conditions of controlled atmosphere at 5 deg C (20% O2 + 77% nitrogen + 3% CO2; 5% O2 + 92% nitrogen + 3% CO2 and 5% O2 + 94% nitrogen + lower than 1% CO2) and under two conditions in air, at 5 deg C and at ambient temperature (6-17 deg C). Results are given.
