Summary

To develop a "nitrogen" freezing for plant products, tests on various regimes of nitrogen vapour precooling, cryogenic freezing by liquid nitrogen spraying and further freezing in nitrogen vapour have been carried out. Technical instructions and conditions for the new "nitrogen" technology of quick freezing of a wide range of berries, fruits and vegetables have been developed.
