Summary
Storage, in particular refrigerated storage, is a feature of industrialized societies to offer the consumer supplies of vegetable products, at the right time and place. However, the particular "personality" of each product necessitates a specific storage regime. The author gives the disadvantages of a uniform treatment in particular the risks. He emphasises the incompatibilities in the storage of various products which are often neglected by commercial concerns.
