Summary

Development of a CG-SM method for determining the amount of diphenylamine (an antioxidant) in the tissues of apples and pears, fresh and/or stored at 0 deg C. Hypotheses are offered to explain the presence of diphenylamine in the fruit. The endogenic nature of this compound remains uncertain.
