Postharvest modifications in kiwifruit.

Summary

The purpose of this research has been to evaluate the effects of various parameters of storage conditions on the quality of kiwifruits. Various fruits have been stored under controlled atmospheres at 0 deg C. The experiment has been repeated after two years. Various parameters have been measured in the fruits along their storage. Only pulp firmness and sugars (soluble solids) exhibited variations and have been reported. From the analysis of these parameters it appears that the ripening process depends on two different independent factors: one which affects the fruits around the agronomical ripening and the other which depends on available ethylene. Both soften the pulp and increase the sugar content, but only the second can be easily brought to a standstill by cold treatment under controlled atmosphere.
