Summary
Besides conventional gas-fired technologies for heating and drying of materials and products, there are also electric-driven technologies. In particular, dielectric heating and drying may lead to cost savings and quality improvement in industrial processes. One method of dielectric heating is microwave heating. Although microwave ovens are used in almost every household (80% in the Netherlands), potential applications in industrial processes are not always recognized. This article describes the possibilities of applying dielectric heating to tempering and thawing of deep-frozen products.
