Summary

Frozen-food warming problems occur mainly during transfers, on a loading dock, for example, where the ambient temperature is higher than the storage temperature. A study was done on modelling of heat exchanges within packages of pallet-packed frozen food placed in positive-temperature surroundings. The digital resolution of the energy equation is carried out in a tridimensional configuration through the method of finite volumes on the PHOENICS software program. The model predicts how temperature will change over time within the products.
