Effect of controlled atmosphere storage on the quality of zucchini squash (Cucurbita pepo var. Giromontina alef).

Summary

In experiments carried out in 2000 the influence of maturity stage, temperature of storage and gas composition on the effects of storage zucchini squash cv. "Astra" were investigated. The fruits were harvested according to three length classes and stored for 2 and 4 weeks. Weight losses were highest for the youngest fruits (length 10-16 cm). The best quality of fruits was obtained after storage at temperature 6°C, in normal atmosphere, and in 3°C at controlled atmosphere 5% CO2: 3% O2 and 3% CO2: 3% O2. Temperature 3°C caused cold injuries of young fruits after 2 weeks of storage. The firmness and soluble solids decreased a little during storage.
