Summary

TWO SPANISH CULTIVARS < VIOLETA > AND < BLANCA DE TUDELA > OF GLOBE ARTICHOKE WERE STORED AT 274 K (1 DEG C) AND FROM 85-90% TO 95 RH AND IN CONTROLLED ATMOSPHERE: 1 TO 6% O2 AND 2 TO 9% DE CO2. PHYSICAL, CHEMICAL AND ORGANOLEPTIC CHARACTERISTICS HAVE BEEN ANALYZED AND THE LOSSES DUE TO TRANSPIRATION, PHYSIOLOGICAL DISORDERS AND FUNGI HAVE BEEN DETERMINED. THE KEEPING QUALITY OF < VIOLETA > WAS SUPERIOR TO < BLANCA DE TUDELA > FOR FOUR WEEKS. THE BEST CONDITIONS FOR < VIOLETA > ARTICHOKE SHOULD BE AT 1-2% O2 AND 3-4% CO2 THROUGH FOUR WEEKS AND THREE DAYS FOR SHELF-LIFE PERIOD. FOR < BLANCA DE TUDELA > VARIETY THERE ARE NOT MUCH DIFFERENCES BETWEEN 2% O2 AND 6% CO2 AND 5-6% O2 AND 3-4% CO2, FOR FOUR WEEKS AND TWO DAYS FOR COMMERCIALIZATION.
