Summary

DRYING CONDITIONS DID NOT MUCH AFFECT THE VIABILITY OF LEUCONOSTOC OENOS CELLS. THE SURVIVAL OF DRIED LACTIC ACID BACTERIA IS GENERALLY BETTER UNDER REFRIGERATION THAN AT THE AMBIENT TEMPERATURE. IN THE RANGE 5 TO 12 DEG C THE VIABLE CELL COUNT REMAINS CONSTANT DURING ABOUT 3 MONTHS, WITHOUT BEING AFFECTED BY HUMIDITY. NEGATIVE EFFECTS OF HIGH VARYING TEMPERATURES WERE OBSERVED, MAINLY IN HUMID SAMPLES. DRIED PREPARATIONS, STORED 8 MONTHS AT 5 deg C AND INOCULATED AFTER REHYDRATION TO STERILE MUSTS AND WINES KEPT A HIGH SUITABILITY FOR MALOLACTIC FERMENTATION.
