Summary

THE PERCENTAGE OF WEIGHT LOSS AND OF SOUND, SHRIVELLED AND ROTTED SPEARS WERE CHECKED AFTER 7 AND 14 DAYS OF STORAGE AT 273 K (0 DEG C). GOOD RESULTS WERE OBTAINED WITH PRECOOLING AND USING TWO DIFFERENT PACKAGINGS. WRAPPING WITH PLASTIC FILM IS PRACTICAL AND HYGIENIC AND IT IS SUGGESTED PARTICULARLY FOR THE SELF SERVICE MARKET. A WATERPROOF CARDBOARD BOX WHERE SPEARS STAND WITH BUTTS ON HYDRATED MATERIAL IS SUGGESTED FOR THE TRADITIONAL MARKET.
