Summary

THE SHELF LIFE OF PASTEURIZED MILK IS EXTENDED BY 21 DAYS ON AVERAGE, WHEN IT IS STORED AT 276 K (3 DEG C) AFTER TREATMENT RATHER THAN AT 280 K (7 DEG C). IT IS SHOWN THAT AN INCREASE IN PASTEURIZATION TEMPERATURE (GREATER THAN 72 K/15 S) DOES NOT IMPROVE SHELF LIFE BUT ALTERS THE MILK FLAVOUR. THE TEXTURE AND THE APPEARANCE ARE LESS AFFECTED.
