Summary

In order to understand some functions and effects of refrigerated storage on postharvest behaviour of polyphenol oxidase and peroxidase activities in mamey sapote (Pouteria sapota) at low and high temperatures, this 25-day study was undertaken; certain physical attributes were also evaluated.
