Summary

THE PHYSICAL, CHEMICAL AND MECHANICAL CHARACTERISTICS OF SEMI-FABRICATED PRODUCTS WERE DETERMINED. A RECIPE WAS DEVELOPED FOR A COTTAGE CHEESE FILLING WITH GIVEN RHEOLOGICAL PROPERTIES STABLE TO FREEZING. THE MANUFACTURING TECHNOLOGY OF QUICK-FROZEN SEMI-FABRICATED PRODUCTS MADE OF COTTAGE CHEESE WITH A 5% MOISTURE CONTENT IS REPORTED.
