Summary
In comparison with fresh fruit, peroxidase activity is limited during the first two months, but is regenerated between the 6th and 12th months of refrigerated storage. The two cultivars studied showed differences regarding their isoenzyme profile, thus explaining the variations in their proneness to freezing.
