Summary
The aim of this study is to determine the effects of freezing rates on the drying time of biltong (one of the traditional dried meat products of South Africa). To analyse the effects of freezing rates on the drying time, the slices were frozen at two different freezing rates (1.5 to 2.5°C/h).
