Summary

The effects of package atmospheres, antimicrobial dips and storage temperatures were investigated. Results are given. It is concluded that nitrogen flushing or use of antimicrobial dips combined with storage at 8 deg C, both enhanced the survival and growth of Listeria populations on shredded lettuce.
