Summary

This study investigated the effect of oligochitosan (OCH) on Alternaria alternata rot in Chinese jujube fruit. The optimal concentration of OCH was found to be 5 g/litre. Besides preventing decay, OCH also enhanced fruit firmness, delayed loss of soluble solids and ascorbic acid and raised the levels at phenolic compounds.
