Effects of packaging films on the qualitative characteristics of Brussels sprouts.

Summary

Brussels sprouts were packed with perforated and non-perforated plastic films in trays containing 250 grammes approximately and were stored at 0 deg C during 8 weeks. After each storage period (1 week) market life was evaluated at 20 deg C. Periodically, package atmosphere, weight loss, chlorophylls, sugars, and ascorbic acid levels were determined. Packages were opened after each market period and general appearance, dehydration, surface colour, decay, etc. were analyzed. Results demonstrated that Brussels sprouts packed with non-perforated films showed a better quality. This effect can be attributed to the decrease in water loss and to the effects of modified atmosphere developed in the package.
