Summary

The effects of different rates of SO2 releaser on fruit respiratory rate, polyphenol oxidase activity, quality and decay in loquat stored at 1 °C were investigated. The results showed that a 2-4 g/kg SO2 releaser inhibited fruit respiratory rate and polyphenol oxidase activity, delayed the decrease in total soluble solids and titratable acid contents, inhibited any increase in fruit firmness and the browning of internal tissue, lowered decay, thereby keeping fruit quality and prolonging storage life.
