Summary

Electronic temperature data loggers are now commercially available. They are set up and interrogated through a computer. The more suitable model used for integration in the field of chilled food preservation is Ratkowsky's equation. Integrators may be used in order to evaluate the microbial safety of a food production and its remaining shelf-life after a given temperature history. It can also be used in order to assess the hygiene of a process, provide that suitable quantitative criteria are available.
