THE A. HAS DRAWN UP COMPLETE COST COMPARISONS FOR A PLANT FREEZING ONION RINGS WITH THE ALTERNATIVES OF MECHANICAL, LIQUID NITROGEN AND LIQUID CARBON DIOXIDE SYSTEMS. THE ENERGY COST FOR THE MECHANICAL SYSTEM IS BY FAR THE LOWEST ALTHOUGH ITS CAPITAL COST IS HIGH. HOWEVER, OVER A 10 YEAR PAYBACK PERIOD AND ALLOWING FOR SUITABLE MAINTENANCE ON THE STORAGE PLANTS FOR THE CRYOGENIC FREEZANTS, THE MECHANICAL SYSTEM STILL REPRESENTS THE BETTER BUY, BEING BETWEEN A SIXTH TO AN EIGHTH OF THE CRYOGENIC SYSTEM PER UNIT MASS OF FOOD FROZEN. FURTHER DISCUSSION DISPELS MANY OF THE SALES ARGUMENTS ADVANCED IN FAVOUR OF CRYOGENIC FREEZANTS, POINTING OUT THAT MOST OF THEM ARE BASED EITHER ON DUBIOUS SCIENTIFIC INTERPRETATIONS OR ON COMPARISONS WITH OUT-DATED MECHANICAL SYSTEMS.
