THE MOST APPROPRIATE EQUATIONS FOR THE CALCULATION OF THE PRIMARY THERMO-PHYSICAL PROPERTIES OF MEAT AND MEAT PRODUCTS ARE PRESENTED. THERMAL CONDUCTIVITY, ENTHALPY, APPARENT HEAT CAPACITY, DENSITY AND THERMAL DIFFUSIVITY ARE STUDIED, AS WELL AS RELATED PROPERTIES SUCH AS FREEZING POINT OR BOUND WATE EQUATIONS WERE SELECTED ON THE BASIS OF SIMPLICITY AND THE ACCURACY OF THE VALUES THEY PROVIDE, WHICH WAS VERIFIED, WHERE POSSIBLE, BY TESTING THEM AGAINST EXPERIMENTAL VALUES.
