Factors affecting the carriage of meat in containers.

Summary
Changes in trading patterns call for some reappraisal of currently accepted design criteria. The effects of packaging, including vacuum packaging, on the required temperature distribution, and its effect on handling and weight loss are discussed. Proposals are made to improve temperature control and air distribution in integral containers. Examples are quoted covering both in-service and controlled test conditions.
