Summary

Cattle have been identified as a reservoir host. Prevalence is usually low but infection is widely distributed in these species under diverse geographical and climatic conditions. Parameters of occurrence are: 1) the application of slurry to pasture; 2) the warmer months of the year; 3) the age of the animal; 4) weaning and mixing of groups of calves before weaning; 5) stress of transport and fasting; 6) small herd size; and 7) the use of computerized feeders. Current slaughtering and carcass dressing practices will not prevent E. coli O157:H7 entering the food chain. Improved hygienic procedures may only reduce contamination.
