INFLUENCE OF LOW VOLTAGE STIMULATION ON POST-MORTEM BIOCHEMISTRY IN NORMAL AND DARK CUTTING BEEF.

Author(s) : LASER-REUTERSWARD A.

Summary

STUDY OF THE EFFECT OF STIMULATION AT 85 V, 32 S, OF YOUNG BULLS EXHAUSTED PRIOR TO SLAUGHTERING. DIFFERENT MUSCLE METABOLITES (LACTATE, GLYCOGEN, GLUCOSE, ATP, ADP, INOSINE AND HYPOXANTHINE) WERE TESTED. ON EXHAUSTED ANIMALS, WHEN MUSCLES STILL CONTAIN ENOUGH GLYCOGEN AND ATP PRIOR TO SLAUGHTERING, STIMULATION MAY GIVE PSE MEAT.
