Summary

WITH THE ADVANCE OF RIPENING THE FRUIT SHAKEN FROM THE TREE SHOWS SOFTENING, WHILE THE HAND-PICKED FRUIT HARDENS BETWEEN 90 AND 100% RIPENESS. THIS PHENOMENON IS BROUGHT ABOUT AS THE RESULTANT OF THE CONTRASTING EFFECTS OF CHANGES IN THE PECTIN COMPOUNDS AND INCREASE OF TURGOR. A CORRELATION WAS OBSERVED BETWEEN ELASTICITY OF THE RAW FRUIT AND THE EXUDATION OF THE QUICK-FROZEN FRUIT. PRECOOLING IMPROVES THE MECHANICAL PROPERTIES, THE FORCE REQUIRED TO REMOVE THE STEM IS REDUCED, THUS THE STEMS DIFFICULT TO REMOVE CAN BE MECHANICALLY SEPARATED.
