THE EFFECT OF STORAGE TEMPERATURE ON THE QUALITY OF APPLE AND THE DEVELOPMENT OF PHYSIOLOGICAL DISORDERS WAS SHOWN. SCALD IS DUE TO THE UNBALANCE OF THE RATIO OF FARNESENE AND ITS OXIDATION PRODUCTS AND ALSO DEPENDS ON STORAGE TEMPERATURE. THE AUTHORS SHOWED THE FAVOURABLE EFFECT OF ANTIOXIDANTS.
