Fast freezing using air cycle technologies.

Summary

Fast freezing using low temperature air can dramatically reduce freezing times and freezer equipment ‘footprint’. This paper outlines the advantages of using air cycle refrigeration for fast freezing and presents data on fast freezing using an air cycle drum/tumbler and a fluidised bed freezer. A mathematical model was used together with measured heat transfer coefficients to predict freezing times of surimi in the tumble freezer, and the predictions were verified using experimentally measured freezing times. The model was then used to predict freezing times in the fluidised bed freezer. The results indicated that freezing times for small products (such as prawns, sliced carrots, surimi and squid rings) in a fluidised bed would be four times faster at –100 °C than at –30 °C.
