MEAT PRODUCTS (HAM, SAUSAGES, SLICED BEEF AND POULTRY), ARE EXPERIMENTALLY INOCULATED WITH LISTERIA, THEN VACUUM PACKED AND STORED AT 277.4 K (4.4 DEG C). THE SURVIVAL OF LISTERIA DURING 12 WEEKS STORAGE OR UNTIL THE PRODUCT CHANGES WAS INVESTIGATED. THE GROWTH RATE OF L. MONOCYTOGENESVARIES WITH TYPE OF PRODUCT AND ITS PH.
