Summary
The amount of hemicellulose, cellulose and lignin in different parts of fresh or cooled asparagus for 7, 14 or 21 days are compared. The results suggest that storage should not last longer than 7 days (fibre content rises in stem particularly). In comparison with freeze-dried asparagus, asparagus dried at 100 deg C shows an increase of fibre content in the head (mainly lignin).
