Flash evaporators for vintage treatment.

Summary

Flash evaporation of vintage is a challenging process which is used to cool grapes, to concentrate wine and to improve wine quality. The study is focused on thermodynamical aspects of vintage flash evaporator design. Indeed, most of difficulties encountered in industrial applications of this process derive from technological choices which are linked to its complex thermodynamical behaviour. A mono-stage falling jet flash evaporator was built, which has been instrumented in order to observe evolution of pressures, temperatures and flows inside separation chamber.
