Summary

If you can get a product to float, you can protect it largely from damage while at the same time freezing it all round. In a nutshell, this is the philosophy behind a new type of fluidised bed just launched, the Whirlwind. The difference in this freezer is that the product advances through the tunnel without the use of a conveyor belt. The product being introduced comes up against an air cushion and moves at an adjustable rate to the output side of the tunnel. One of the limitations of this technique is that it is suitable only for small products.
