Summary
Clogging, brought about by feeding the product into the device directly after washing, must be averted to prevent disappointing results. Dramatic improvement may be made by integrating a conditioning section into the freezing system, to operate at moderate below-zero temperatures. In a fluidized-bed freezer, presented in the article, part fluidisation and conditioning make all the difference.
