Summary

The cold chain follow-up may be used as a tool for estimating the food supply chain and assessing the food products quality at various stages of the cold chain on the basis of realistic scenarios. The aim of this work performed within the European Frisbee(1) project, was to conduct two field testing trials, both in Greece and in France, on specific chilled and frozen meat products. Under the test design, some electronic temperature recording devices were integrated into 580 food products all in all on the production line, as part of the cold chain from manufacturing to household refrigerators. The recorded data was then analyzed and used in order to evaluate the temperature throughout the cold chain stages. The results of the specific survey may serve for assessing the true cold chain of chilled and frozen meat products in Europe. The recovered temperature profile was used to enhance the publically available cold chain database (www.frisbee-project.eu/coldchaindb).
