Freezer development for sensitive individual-quick frozen fruit and vegetables.

Summary

The author discusses the development of individual-quick freezing of small products (peas, small fruits, Brussels sprouts, beans) which tend to stick together on belt freezers and are presently individually-quick frozen in fluidized-bed freezers, the origin of which dates back to 1962 (Flofreeze). The design and development of fluidized-bed freezers are presented.
