Summary

Strawberries (Sweet Charlie variety), were frozen by two freezing methods: a) mixed cryogenic CO2 and mechanical, b) mechanical. They were compared with commercial frozen strawberries. The materials were stored for 10, 20 and 30 days, at -19 plus or minus 2°C. It was concluded that this method is better than the mechanical, for this kind of products since there is a considerable time and energy saving.
