Summary

A method for ultrasonic measurement of frozen fish glazing thickness is described. There is a short introduction to glazing and the need for an accurate and nondestructive glazing thickness measuring device. The equipment and its required characteristics are described. Recommendations related to equipment settings and adjustment are established in order to obtain reliable and precise glazing measurements. Results of measures, with ultrasonic and usual devices, on salmon, are presented. The results show that frozen fish glazing thickness measurement by ultrasonic sound is a practical, convenient, quick and reliable technique.
