Summary

A STUDY OF FROZEN FISH IN DISTRIBUTION IN THE UK WAS CARRIED OUT BETWEEN JANUARY 1982 AND JULY 1983 INCLUSIVE. IT WAS DIVIDED INTO THREE STAGES, RETAIL STORES, SECONDARY COLD STORES AND PRIMARY COLD STORES. FIVE CENTRES IN VARIOUS PARTS OF THE COUNTRY WHICH REPRESENT DIFFERENT PATTERNS OF DISTRIBUTION WERE SELECTED. THREE TYPES OF FISH PRODUCTS WERE CHOSEN AND THE TEMPERATURE, THE TIME IN DISTRIBUTION AND THE QUALITY AT EACH STAGE WERE MEASURED.
