IN THE FROZEN PASTRY SECTOR, FRENCH DOMESTIC PRODUCTION IN 1989 AMOUNTED TO 18,961 TONNES, IMPORTS 4,580 TONNES AND THE REAL MARKET 22,903 TONNES. THE DEMAND BY VOLUME WAS 50% CATERING (+ 15%) AND 50% AT HOME. REGARDING THE HOUSEHOLD MARKET, HOME SERVICES ACCOUNTED FOR 40%, FREEZER CENTERS 30% AND LARGE AND MEDIUM-SIZED STORES, 30%. FOUR BRANDS SHARE 80% OF THE MARKET. QUALITY, SERVICE (PRECUTTING, INDIVIDUAL PORTIONS) AND PRODUCT RANGE ARE NEW FACTORS IN THE SUCCESSFUL FROZEN PASTRY SECTOR.
